Savoury pancakes
ingredients
- 110g flour (wholemeal spelt, rye)
- 2 eggs
- 100ml milk + 35ml water
- 40g Coconut oil (solid)
- Cream cheese
- Mushrooms
optional: fry mushrooms
- fry up mushrooms for 3 minutes, covered
- set aside
- thoroughly clean pan (or it’ll stick)
method
- Measure 40g coconut oil into frying pan & melt on induction hob #4
- Sieve flour into mixing bowl from a height
- Make a well & break in 2 eggs
- Whisk thoroughly
- Gradually add 100ml + 35ml water
- Blend if not smooth
- Pour ½ of melted coconut into mix, ½ into ramekin
for each pancake
- Turn up induction hob to #7 & wait for 1 minute
- Fold a piece of kitchen roll, dip in remekin and wipe all around frying pan
- Add 1 ladle of mixture
- Set timer for 1 minute
- If it moves easily, flip
- Set timer for 1 minute
- Add cream cheese & mushrooms onto pancake
- After 1 minute, remove
- Roll and cut into pieces
