Savoury pancakes

ingredients

  • 110g flour (wholemeal spelt, rye)
  • 2 eggs
  • 100ml milk + 35ml water
  • 40g Coconut oil (solid)
  • Cream cheese
  • Mushrooms

optional: fry mushrooms

  • fry up mushrooms for 3 minutes, covered
  • set aside
  • thoroughly clean pan (or it’ll stick)

method

  • Measure 40g coconut oil into frying pan & melt on induction hob #4
  • Sieve flour into mixing bowl from a height
  • Make a well & break in 2 eggs
  • Whisk thoroughly
  • Gradually add 100ml + 35ml water
  • Blend if not smooth
  • Pour ½ of melted coconut into mix, ½ into ramekin

for each pancake

  • Turn up induction hob to #7 & wait for 1 minute
  • Fold a piece of kitchen roll, dip in remekin and wipe all around frying pan
  • Add 1 ladle of mixture
  • Set timer for 1 minute
  • If it moves easily, flip
  • Set timer for 1 minute
  • Add cream cheese & mushrooms onto pancake
  • After 1 minute, remove
  • Roll and cut into pieces
