Spelt cupcakes

Adapted from BBC Good Food

Makes 6 cupcakes

ingredients

  • 1 egg
  • 60g butter (salted fine)
  • 60g sugar
  • ⅓ tsp vanilla extract
  • 60g white spelt flour
  • 1½ tsp baking powder
  • icing sugar

method

  • preheat oven to 180°
  • slightly warm butter to make it soft
  • whisk butter and sugar together in bowl
  • add egg & vanilla extract
  • add flour
  • add baking powder
  • optional: add a pinch of salt IF using unsalted butter
  • splat into 6 cupcake paper cases
  • cook for 15-20 minutes
  • after brown & golden, cool for 5 minutes

icing

While the cupcakes cook:

  • use 35g icing sugar + 1 tsp water
  • (assumed ratio 200g / 2 tbsp water)
  • add icing to cupcakes after cooling
