Spelt cupcakes
Adapted from BBC Good Food
Makes 6 cupcakes
ingredients
- 60g butter (salted fine)
- 60g sugar
- ⅓ tsp vanilla extract
- 60g white spelt flour
- 1½ tsp baking powder
- icing sugar
method
- preheat oven to 180°
- slightly warm butter to make it soft
- whisk butter and sugar together in bowl
- add egg & vanilla extract
- optional: add a pinch of salt IF using unsalted butter
- splat into 6 cupcake paper cases
icing
- use 35g icing sugar + 1 tsp water
- (assumed ratio 200g / 2 tbsp water)
